150g Garlic croutons
400g Romaine lettuce
2 cloves Garlic
2 fillets canned anchovies
Salt to taste
Ground black pepper from the mill
2nos egg yolks
10-15ml lime juice
150ml extra virgin olive oil
70g Parmesan cheese
5g Dijon mustard
200g chicken breast
Dressing
Always use pasteurized eggs for health reasons
Chop the anchovies and add into the egg yolks. Add lime juice, mustard, salt, pepper and finely chopped garlic.
Slowly add extra virgin olive oil and create an emulsion
Add the romaine lettuce and parmesan
Garnish with croutons
Grill the chicken with seasoning. Slice and add on top of the salad
Personal preference: A chilled Caesar salad with warm chicken is absolutely delicious!
