Egg and scallion fried rice


The secret behind a great fried rice is the Wok hei or Wok breath

Heat and season your wok well. I personally love a good egg fried with scallions.


Egg and scallion fried rice

For the rice

1kg Jasmine rice

1.2l water

-Wash the rice well

-Boil the water, add the rice and cook for fifteen minutes on slow heat

-Let it rest for twenty minutes


For the Egg and scallion fried rice

200g boiled Jasmine rice

2no fresh eggs

50g chopped scallions

5g Salt

2g Castor sugar

2g White pepper powder

2g Chicken broth powder

100 ml Oil to season the wok

-Heat the wok well. Add the oil and swerve around the whole pan

-Remove all the oil

-Add the eggs and scramble. Reserve.

-Add 10ml of oil, jasmine rice, seasoning and on high heat toss till there is smoke(wok hei) and the rice is fried evenly.

-Add the eggs and scallions

-Remove in a bowl and garnish with more scallions


Enjoy with beef black pepper, chicken black bean or my fav the original Mapo tofu
