Fried calamari, aioli


For the Calamari

250g Calamari

200g flour

Salt to taste

120g corn flour

5g white pepper

200g Milk

1 liter frying oil

Cut the calamari in roundels and soak in milk

Mix flour and corn flour and seasonings

Coat with flour and dip in milk. Repeat thrice.

Fry in oil at 180ºC.


Aioli

40g Garlic

2ml oil

Salt to taste

100g Mayo

Roast the garlic in aluminum foil with salt and oil at 160ºC till cooked.

Puree, strain and fold into the mayonnaise.


You can try this with assorted seafood like prawn, squid and scallops as well. Bon appetit!
