Pasta dough



1kg ‘00’ flour

42 egg yolks

Pinch of salt

Drizzle of extra virgin olive oil

-Spread the flour on a table, add salt

-Make a well in the middle, add in the eggs

-Incorporate the eggs with the flour.

-Keep kneading the same till it becomes a dough

-Add a little extra virgin olive oil

-Wrap in cling wrap and rest for 3-4 hours


Sheet and cut into your favourite shapes-Taglitelle, fettuccine, lasagna sheets or use of various raviolis.
