Vanilla bean panna cotta, berries and mint

Vanilla bean pannacotta

250ml milk

250ml cream

50g sugar

1 vanilla bean pod

4 sheets gelatin

Soak the gelatin in cold water

Heat the milk, add sugar and scraped vanilla pods

Add the pre soaked drained gelatin

Reserve in molds in the freezer


Blueberry compote

100g Blueberries

30g sugar

50ml water

Heat together and chill


Raspberry coulis

100g raspberries

40g sugar

30ml water

Heat in a pan and reduce to half

Blend finely and strain


Garnish

Fresh berries

Mint sprigs
